Invented in Sicily, ricotta cheese (Italian for recooked cheese) is a product of provolone cheese by recooking the whey and skimming the top and drying. The Ricotta Cheesecake is a cake served around the holidays Christmas, Easter, and Mother’s Day. This cheesecake, lighter then the New York Cheesecake, is decadent and rich, with slight hints of orange. The texture is incredible. The pleasure starts with pushing the fork gently through the cake, watching how perfectly it slices, and rolls to the plate, then how its light cheesy custard melts in your mouth, leaving you in awe! If you love Ricotta Cheesecake or have never had it before, you must have this one. We promise that this is a culinary experience that you will find yourself describing to your friends and coworkers for years to come. This is our masterpiece! We will make small batches up until a week before Christmas and they will be available first come first serve. They will sell out and we will try and post when a new batch is available. The Don’s Ricotta is perfect in taste and texture. If heaven had a taste, I think we found it!
